Fluctuating tunnel, or "fluid bed", is a system studied to be used in the online elaborations of all those products of small size such as: cherries, peas, etc. They need to be frozen quickly, uniformly and precisely to guarantee the complete preservation of their organoleptic characteristics and correct management in the subsequent packaging phase, avoiding the problem of encountering agglomerates of frozen products. The ventilation system of the machine is constituted by powerful fans that, directing the air below the rectilinear path through which the product passes, raises it by freezing it.
